A human being should be able to change a diaper, plan an invasion, butcher a hog, conn a ship, design a building, write a sonnet, balance accounts, build a wall, set a bone, comfort the dying, take orders, give orders, cooperate, act alone, solve equations, analyze a new problem, pitch manure, program a computer, cook a tasty meal, fight efficiently, die gallantly. Specialization is for insects.

Champagne Yeast

Champagne yeast is a special breed of yeast that can ferment sugars up to a much higher percentage of alcohol, up to 18 percent.

It is a bit of a select strain, and you probably won't find it in most wine store, so you will have to order it online.

Haven't tried it myself yet, and while I think it might be interesting, I haven't bothered yet, as I am mostly making alcohol to convert to vinegar, and we don't need that high a percentage.
