Alcohol > BasicRecipes > JuiceBreadYeast Sugar wash
An alcohol wash seems seems to be the best way of making vinegar for food preservation. The caveat is we need to have pure cane sugar available, either in our stock or to purchase.
When we use something like apple cider or grapes to make vinegar it will stain the food we are trying to preserve. Not a horrible proposition, but I think we can do better.
Distilled vinegar is made from grain alcohol which would require us to perform complex testing, so that's out of the question.
For an sugar wash, we are only using 3 ingredients. Water, sugar and yeast. The recipe would be the same as the juice and yeast, but we need to figure out how to get 6% alcohol with no left over sugar.
In addition, from what I can tell from my research, the vinegar needs something to feel on beyond the pure alcohol.
