Vacuum Sealing

Bacteria are what cause food to spoil. As bacteria feed on foods they release wastes that give food the rotten smell and appearance.

If you remove the moisture from foods, you can greatly extend it's shelf life. When you vacuum seal this food, you not only prevent moisture from reentering the food but you remove the oxygen that most molds and bacteria need to grow. As a final step store foods in a constantly cool location such as a basement. Molds and bacteria find it almost impossible to grow in such conditions.

Food saver makes a Jar sealer attachment that allows you to vacuum seal canning jars with their Food Saver vacuum sealer. It's a great system and works well, but unfortunately doesn't fit in with my SHTF Everything philosophy. Once the power is down the food saver will be useless.

The answer is to combine the Jar sealer attachment with a cheap brake bleeder, that generates it's own vacuum manually.
