Preservation > Canning > DryCanning Dry Canning
Dry canning is one of those 'my grand pappy did it for years and we never had a problem' kind of activities. People have done it for a long time and it almost works every time. To make it seem even safer, we almost never hear from the old timers who proved it didn't work, as they are all dead from botulism.
Like all other food preservation methods, I need it to either work perfectly every time or be
obvious when it doesn't. During a SHTF event I don't want to worry if my stored food is going to make one of us sick. Especially knowing a hospital might not be available.
If there was nothing else available, I might 'keep it in my back pocket', but there is a perfectly viable alternate: Vacuum Sealing.
